Im working on a few stainless paring knives. And, As I started grinding the bevels I was unsure if I should take the grind full on the edge or stop it just short or the handle area.

The handle will stop just behind the index finger groove. and there will be no bolsters. At least thats the plan at the moment. ;)

Heres a picture of the blades. Any input would be appreciated.

Knock, Knock, Knock.. Hello..... anyone?

Full cutting edge or stop short just in front of the index finger grove?

02-04-2013, 05:48 PM
Full edge for sure.

Hey Randy - I would go full.

02-04-2013, 06:11 PM
No reason not go full with the finger cutout and no bolster.

02-04-2013, 06:23 PM
Full length Randy - it's more useful not to mention easier to sharpen.

02-04-2013, 06:57 PM
Full edge. Looks like a winner!

NO ChoP!

Oh no, Its all good!! I got paid for it. :) hehehe

I have to focus on some "custom" orders for a few very patient and understanding clients.. But as soon as possible I will start on the next round.. Which will be AEB-L 240's I have a dozen blades profiled, and heat treated.. Just waiting for me to start on them!

03-04-2013, 06:32 PM
I was meaning the poor guy who's didn't go out today. ;)

lol. I know.

He was actually lucky!! A guy from Russia backed out on the knife and he was there and ready to scoop it up!! :)

03-04-2013, 11:17 PM
I would love to see the blade profile on those AEB-L 240mm gyutos. Got any pics to share yet?

Unless Randy has gone completely crazy, which is an option, it should be these guys: http://www.kitchenknifeforums.com/showthread.php/6867-Whats-on-the-bench?p=185042&viewfull=1#post185042

Thanks Andrew H, I appreciate it. Randy also sent me the link.

I think the profile is great and I really like the shape of the handle too. Not to mention I'm becoming an AEB-L and CPM 154 guy almost exclusively now.

I am seriously considering one, we'll see what my money situation is like after I get a Rodrigue mid-tech (hopefully).

Thanks Andrew! :D

Yep these are the ones. Im not taking pre orders on them but as they are done Ill post them here on the forum. I may start a email list if there is enough interest to justify do so.

Now show us some of them paring knives in use!

03-13-2013, 09:47 PM

I got my paring knife today and I must tell you how beautiful it is. I really appreciate the time and workmanship you put into it. The fit and finish is first rate and the wood you used has great chatoyancy (I'm sure your polishing job contributed too). No action shots yet, but I will try and post some by the weekend once I start using this little scalpel.

I have to tell you that I was seriously considering my next custom from another maker, but this paring knife has me thinking I might get in line for one of those 240 AEB-L gyuto you have on the bench instead.

Feel free to shoot me a message or email on the 240 at your convenience.

The blade was great OOTB, but once I stropped it on felt charged with 1 micron diamond solution it went from sharp to WHOA!

03-15-2013, 01:44 PM
Good afternoon Sir Randy. I finally got my paring knife today and WOW. PERFECT!! Outstanding workmanship. The fit and finish is first rate and the wood is very seductive.I stroped it on .5m diamond ..SCAAAARY!!!!
