Hello all,

After two years of almost daily lurking I thought it was about time introduce myself.

I´m a home chef for 20 years, 38 years old, cooking basically daily for my wife and daughter. Big interest in food and food related tools. I have been picking up steel and stones for about five years now, mainly on our annual trips to Japan.

I have a soft spot for carbon steel and I have made a few chicken ballotines, so I´m really enjoying this forum.

Have a nice day!

Albert

Welcome!

I had to look up chicken ballotines. Was expecting something like a guillotine.

Chicken ballotines are fun, did you get the inspiration from that Pepin video on youtube?

Found and posted pix of one ballotine: http://www.kitchenknifeforums.com/showthread.php/10881-My-take-on-the-forum-bird

By the way, maybe it sounded like I´ve been buying tons of gear wich is not true, but I bought some. I´ll try to post.

KS 270 gyuto that I sort of polished. Photo was taken in flattering light, but it´s a lovely knife.
