View Full Version : Sharpening a forgecraft chef
I recently bought 8 and 10 forgecraft chef on ebay and boy do they need sharpening (otherwise in good shape). What angles and grits do people use for them?? Should they be microbeveled?

I've had a few, and they were all very dull. I removed quite a bit of steel on the belt, and then cleaned it up on the stones. I would go 20 degrees/ no microbevel, after some good thinning. Also, I'd stop in the 1k to 2k range. Good thing is, they are very responsive to a few light passes on a ceramic rod.

On my ODC knives, I leave it at a 1k edge. And like said above, no micro bevels.

No experience with Forgecraft. With other soft 1095, I add a single microbevel à la Jon Broida @35 degree on a 3k. It's important to really cut the microbevel, and not round towards it. It should allow you to stay beneath an inclusive 30 degree edge.
