You know what? These little guys take nearly as much time and effort as a 180 Gyuto!

CPM 154 paring knife @ HRC 61, hand rubbed finish, tapered tang. 80 mm on the edge, 190 mm OAL, spine is 3mm at the bolster, full distal taper.

Stainless bolsters, peened through

Dyed stabilized maple scales, and white vulcanized fiber liners with mosaic pins.
