Hello! I'm to order Hiromoto sujihiki 210 in Gingami 3, but have no experience with this steel. How does it sharpen? What can I expect?

easier to sharpen than vg10 and whatever misono uses in their ux10. it gets quite sharp (I haven't been able to get it as sharp as my TKC though) and holds it quite well.
