Hello everyone. As some already know, I have been working on a "secret" project and I am now ready to tell you all what it is.

I have been working closely with Lamson & Goodnow (L&G for short) Designing and refining a HHH Production 240mm gyuto. I chose AEB-L Stainless steel, because its a great Stainless. The profile is my 240mm western. L&G have been doing great things as of late and I know these knives will be another home run.

They will be AEB-L, Heat treated to my specs. with a RC of 60/61
They will be ground thin at the edge and will be great all around cutters.
These knives are my western profile and will have beautiful 4AAAA figured rosewood handles. and you know if I selected the handle material its gona be beautiful!! The handles will be secured with 3 pins.

The blade specs are as follows.
240mm on the edge.
height will be approx. 49mm at the heel.
Blade thickness will be approx 2.5 mm above the heel tapering to the tip.
Overall length is approx 14.5"
Rounded spine and choil
Contoured Rosewood handle


This first batch will be numbered on the blades 1-100 and come with a certificate of authenticity with each knife.

Expected delivery Christmas 2013. But with production ya never really know. If this changes I will update this thread with new expected delivery dates. Yet L&G remain positive that delivery to me will be mid Dec. Making Christmas doable!

I will deliver these in the order in which I receive the deposits. If you have a request for a number. I will make it happen if its possible. Yet I have to give the first one to my wife. After that I will give them in the order in which the payment were received. unless a special request for say number 55 comes in B4 55 are sold then I will gladly substitute and make the change happen. :)

Pre order price on this will be.
$245.00 delivered in the USA
$240.00 + 25.00 delivered international.

Payment. Im gona do payments through PayPal. Its easiest for me to print labels and keep a accurate record of the sales and shipments.

Knife pictures below are to represent the blade profile and handle style. :) I currently dont have a finished knife to show ya yet! But will have soon! You can count on it looking very similar to these knives with awesome Honduran rosewood handles. and 3 SS pins. :cool2:

These will be HHH branded with numbers to identify them as 1 of 100 in the series. I hope to make a 8" and a slicer and petty. :) and only do short runs. of around 100. All will bear my H's and come numbered. Each will pass through my hands for final sharpening and inspection.

The grinds on these are to my specs. and L&G will produce them based off my actual grinds. Which if ya think about it, its pretty cool! The process has taken the longest time so far. Refining that step so they will be great cutters. :D

Sneak peak photos of the final proto type blade and handle!!

The blade is ground with sweet distal taper. Rounded spine and choil. Contoured Rosewood handles..

For this one I made the handles where they could easily be removed for L&G to be able to use and duplicate. The finished knives will have 3 1/4" stainless fasteners. :)

Im super excited about these and looking forward to round 2 and 3 and 4. :wink: Thanks everyone for your continued support and encouragement!

I wanted to share a snap shot of the heel of the production ground blade. and a side by side.

My hand grind on the L and the Production grind on the R Im very pleased!!!! :doublethumbsup:

(Just a note. The heel on these will be relieved and rounded. although it is not in this image.)


The knives are selling fast I want to thank everyone for there trust and support on the first round of blades!! Its very humbling and encouraging! :D

UPDATE!!! The blades are all cut and surface ground and ready for Heat Treat.. They will be sent to Heat Treat Monday morning. Ill try and get a photo of them B4 shipping them out.

The timeline looks GOOD so far and I am happy that it looks like delivery dates will be as I stated. B4 Christmas in the USA!! and hopeful for enough time where the worldwide orders are delivered in time as well. Got my fingers crossed!

Should be finalizing the design on the second knife this week and will post some pencil drafts of it soon! So far I can tell you guys this. 200ish blade with SS Ferrule and blackwood handles. Followed closely by 2 more blade styles!!! Open to suggestions although I am pretty set on the last 2 designs.. :razz:

Yes Same steel type. Different handle. a profile I call Midway. So yea. its basically a gyuto/chef style blade.

These knives are all gona have book matched scales. You would think most knives using wood for the handles have this. They dont. normally the wood is cut into scale shapes pieces. L and R and there just pulled at random for each knife . Were going to make sure that every knife is done "right" with book matches sets. May seem like a small detail, but will make every knife look even better!! :)

UPDATE! Blades came back from HT last week and after testing them were at a average RC of 61.5 Damn fine if I do say so myself!! ;)

Everything is on schedule and I expect the knives to be here second week of Dec. Then Ill be sharpening, boxing and shipping them all ASAP!

jakuda, Yes. The handles will be made from hand picked rosewood and secured with stainless fasteners. They had to get "special" fasteners made to accommodate the contour and handle shape. :) There gona be nice!! :D

I also received a heel picture and a short video of them Grinding the blades. Im having alot of fun with this. The grinds look KILLER. Really, there not only thin at the edge but also thin behind it! These are gone be amazing WHIPS!

Wont take long at all!! ;) L&G will be adding my HHH logo and the numbers with a cool laser tool that is operated with CNC.. I seen a video of them as they tested my logo and the process literally takes only a few seconds per pass. Its literally gona take longer to put a new knife into the machine and remove the one that was just done. then the amount of time it takes the laser to make the mark. Its pretty cool really.

Im planning a trip to the L&G headquarters either late winter or early spring 2014. I just gota see it!!

From all I have seen in photos or short videos as well as heard from talking with the owners.. The place is a amazing combination of old meets new. There still running some machines that are from the 30s and 40s.. And then right next to that is a machine thats operated all fancy and new and is CNC and stuff! I cant wait to spend some time there.

I like mineral oil. Or you can use a good board wax. which is usually a combination of oil and bees wax. :) Either will do a good job. the added wax gives a longer lasting polish.

I've read that Rosewood doesn't take stabilizing, but that Rosewood burl is softer and should be stabilized. What's your opinion about that?

Good question. I could answer with a quick. NO or YES but what fun would that be?

Honduran Rosewood does not need stabilization. And is a very dence hardwood that is naturally oily, or has a natural resin that makes it very water resistant and also allows it to polish up beautifully!! There is a rare exception, When the wood has been dead for a long time and left either in the ground or laying in a area where its exposed to the elements for a very long time before its harvested for use.. Often these pieces of rosewood are from the trunk and even the roots.
So if the tree was cut 40 years ago and then someone comes behind and pulls the stumps (which happens as land is developed or mined.) These pieces can and do have various amounts of decay, spalted and rotten wood. In this case. Some suppliers are trying to stabilize it with mixed results. So even after stabilization.. The results are sketchy..

I have tested stabilized rosewoods and cocobolo. and my opinion is. There is still some work to be done to make this sort of wood a GOOD usable handle. So far. Im not convinced that its viable or worth the effort for medeocure results.. The pieces that do seem like stabilization "worked". Were not really "bad" to begin with. To this date. The pieces I tested were not up to my standards.. Just sayin.. So, if someone blows smoke about a "secret" stabilization process, or whatnot. I would approach with caution if your gona put it on a knife and put your name on it.


To summarize, I have found that natural rosewood is among the most stable woods available. and does not benefit from or take stabilization.

Is the burl softer then the straight grain wood? It can be. But this is the case with just about every species that has a burl. Its just the nature of the beast.

UPDATE!!


I just got word that 60 of these will be sent to me this week. With delivery Sat. They will be numbered 1 - 60 The remaining 40 will ship out sometime next week. 61-100 and the other non numbered knives.

Some of you have requested a number higher then 60 and I want to make sure and send out the first 60 to the guys and gals here on KKF first.
So what I am saying. IF you selected a number higher then 60. and dont mind waiting a little longer for your knife. Possibly arriving the day after Christmas or later.. Then you dont have to do anything. If you have selected a number over 60. and want to get on the list for shipping regardless of what number you receive. Shoot me a message with you name as its written in paypal. and I will give you the lowest number available rather then the number you originally requested.

My plan is to send out the first 60 on Monday. Baring any further unexpected problems.. Then sending the remaining knives including the non numbered knives when the second round is delivered next week.


I expect the remaining knives arrive by mid week hopeful they will be in my hands on the 18th. That is cutting it close and wishing that everything goes perfectly. for a B4 Christmas delivery. Sorry about any confusion or problems. Were doing our best to get all of these post dated at least 3 days B4 Christmas. Yet I feel the need to post this just in case. I am probably worrying to much about this. But would rather tell you all whats up NOW then try and deal with unhappy people the day after Christmas!!!

Again. In hopes of meeting the Christmas date to all of the forum members. If you have requested a number over 60. and want to change to the lowest available number and get in on the first round of shipping. Message me with your name, and the number you had requested and I will switch it and get you on the first round that will be shipped.

UPDATE!!

The first 50 knives are on the way to Michigan!! :) Expected delivery by the end of the day tomorrow.. and I expect to send these out Monday!!

After having a chance to check over some of them. Cut some protein, and veggies with one. All I can say is HECKS YEA!!!! Chef Large and his lovely bride were here today and chef also had a chance to play around with the knife..

Yea, Sorry about the confusion. Your the 4th person asking about that. That number is actually a HHH Custom Knives website thing. To help me keep track of orders that came through the site. your order was 113. Not your knife number!! :)



Im also pleased to say that almost all of the USA Pre Buy orders that came from KKF were in this round of knives.. Unless you requested a higher number then 50 and didnt ask me to change your order..

There were a few USA orders that were from the last week or so that didnt make the cut. and some of you guys that are international. You guys and gals will be first on my list when the second package arrives from L&G!

A grab bag of AWESOME from my stash of handle materials. African Blackwood , Stabilized Redwood Burl , Stabilized Ziricote, Chechen, Natural Birdseye Granadillo, Stabilized Chechen Eye Burl, Honduran Rosewood BURL!! Stabilized Curly Jarrah, Stabilized Ramon Eye Burl, Stabilized York Gum Burl, Cocobolo, Stabilized and Dyed Black Ash Burl. Stabilized Lacewood. to name a few!!!

These knives will also become available around Christmas!

While Im writing, Let me tell you about the next round of knives!! We are finalizing a expected delivery date and working on the final details of the knives NOW. I should be making a announcement shortly after Christmas or before. Ill lay out all the details and info on a separate thread ASAP.

Does not sound like he has time. Maybe he did busy guy.I would not worry about it though.As long as the grind is good,AEB-L is pretty easy to sharpen because of it's small carbides.Takes a very nice edge almost like carbon,but stainless a nice combination.

Good morning. The edge that L&G put on these knives was very good. I checked each and stropped them all and really only needed to touch up and or sharpen about 12 so far. Most of them came to me nice and sharp. and I am thankful for that as I did feel pressured to get them in the mail ASAP!! :)

For future production runs. International orders will have a higher shipping price. I took a beating on the shipping costs to most of the international orders. Payng over 40.00 to send one knife overseas. What I found was the average price was $35.00... 10.00 over the 25.00 I charged. Just a heads up for next batch and the remaining knives in this batch.

Well I better get my butt to work and get these to the post office.

After today I see this thread, or a new thread, exploding with posts of people that receive their knives! Mine shows that it will be out for delivery today! First thing will be to snap a few pictures and then cut something.

Yeah, I'm looking forward to the feedback, reports, and pics! Randy, should comments go in your section, or The Kitchen Knife section? I'd think more people would see them in The Kitchen Knife. Maybe you should start a new thread where you want the comments to go . . .

One of the great things about my job as an Operations Manager is I have the luxury of working from home if I choose. And of course I did choose to work from home today because Mr. Mailman just dropped off #18! Still need to finish up some work but first impressions are that this knife is beautiful!! Nice grind with a very good distal taper. Now I need to finish up for today so I can prep dinner and take a few pictures to post! Thanks for such an amazing project Randy!!!

You know how the tracking is sometimes. They scan it one time and then B4 ya know it. they deliver it. lol

Just a quick update on these. Yes there are still a few of the 100 numbered knives that are available. They have been shipped to me and tracking says I will get them this week Thursday.

We are also working to finalize the details for a second round of 240's as well as 3 other knife designs. Starting with a Wa handle 200mm line knife I call the Midway.. I think you all will like! :hungry:

Ill start a new thread once the details are locked in and we have a expected delivery date. Im shooting for B4 Easter.. :scratchhead:
