What's your favorite knife to use that you don't use all the time?

For example, I love it any time I am doing something that really lets me use my CCK. Most of the time it just sits around because I'm using my gyuto, but I almost always smile when I find a task that just begs for the CCK. It's just fun to use.

I just love it when I can take my Usuba out for a good spin. Doing katsuramuki on a fresh japaneseradish for instance. That gives me a lot of joy and excitement.

My H AS 300 Wa Gyuto, I guess cause I just don't have the room in my kitchen to use it properly that when I do get it down I just enjoy the time with it :)

right now, I'm having fun with my nakiri. The girls like to come in the back and play with it, they say it's "G" because it looks like a little hatchet :lol2:

My K2 by Robert Herder, Solingen. It's so thin...I've set an 8 degrees edge on it and use it just for delicate tasks without hitting the board.

I have a old school Forgecraft slicer of my grandfathers that I still get a kick out of using.
