Hi There! Never posted much elsewhere, and haven't even been reading in months, but I really appreciate all the advice that various "knife nuts" have posted all over the Web. They led me about a year ago to acquire a Tanaka Ironwood gyuto and nakiri, and — in all seriousness — my diet has improved because I look for excuses to use the knives. I am eating more healthfully and tastefully because of the enjoyment I get from using a good knife.

As finances allow I will be interested in a figured wood saya for at least the gyuto, so I'll be looking for direction about that!

Hi all!

I've spent quite a bit of time lurking and reading and learning on the other forums out there, but just recently have started to get active with posts, photos, and videos. I'm excited to finally see a place start form the ground up as a KITCHEN knife forum. I couldnt believe that the domain was still available- I guess it just shows how under served this community had been in relation to the greater knife world.

Haven't been very active on the other forums lately as other hobbies have taken precedence over my knife-nuttery, but I'm happy there's a new place for us. And glad to see so many new ventures from Mr. Martell -- when does he sleep? I'm sure these forums will be great.

Hi All!!

I'm glad to join this Forum!!

I am a knife and stone addict!!!!!...... and I'm sure this Forum will help me with my addiction!!!!

My latest stones arrived today, only ordered them on Friday, from Jon at Japanese Knife Imports. Got the 'Gesshin' 1000 grit and 5000 grit and my first impression is very positive! It took only a few minutes to put a push cut edge on my Devin Thomas AEBL petty; also put a screaming edge on my HD petty.

Yeah where is that guy? I emailed his work and PM'd him at a couple of forums but haven't heard from him. If anyone has direct contact with Scott please invite him over, I'm sure that there's lots of people who be happy to see him again.

I haven't been visiting any forums recently (I have 2 8-month old black lab puppies, it's just like having babies all over again), thanks for the heads up, will try to catch up on all things knife related. I did get a new knife yesterday (not a kitchen knife, though)- Spyderco EDCF GITD Manix 2 (how about all those acronyms?)-it's very cool, but I don't think the glow in the dark scale material would work on a kitchen knife, probably too slippery...& who cooks in the dark anyway? Thistle/LBNoble

Hello everyone.

I hope there’s room for an avid home cook, wannabe knife enthusiast to come aboard. My interest in Japanese cutlery started about a year or two ago. I’ve learned a lot, but have only scratched the surface. Japanese knives, especially the single bevel ones are a whole new can of worms from the European cutlery that I was used too.

Dave, I just read and was deeply saddened by what happened on the other forum. Regardless of whatever fubar occurred, your contributions, advice, and willingness to help is beyond reproach. I can’t thank you enough for helping and inspiring me to become better at sharpening. I’m glad to see you’ve formed a new forum and look forward to learning more.

As way of formal intro- I am an avid home cook, woodworker, motorcycle nut, retired goldsmith. I have been making woodworking tools from scratch for some time, as well as customizing an old '65 Triumph motorcycle. I acquired my first J knife last December, a Takeda gyuto, followed by a Tanaka ironwood handled R2 petty.
Right now I am in the process of making a wa-honesuki out of O1 that will have an ebony/maple burl handle. My wife said I couldn't buy more knives so I'm making them!
Progress is a bit slow right now as I broke a bone in my foot at the end of December that isn't healing right, butt I have faith that I will be back to full steam before too long.

My husband bought me the best Christmas gift ever a few years ago, a set of Henckels's Twin Cuisine knives. Love them except I've had trouble with the handles cracking despite careful handwashing....Anyway. I love to try out new food and my daughter and husband are the guinea pigs for it. I'm trying to find out if any of you folks know where I can get the fun t-shirts that Michael Symon wears on his Cooking Channel show "Cook Like and Iron Chef"?

Nice to see a new knife forum!

I was a sometimes-denizen of KF and Fred's a few years ago. Got involved when I wanted to replace my sterling collection of Chicago Cutlery and didn't particularly like the wares of Henkels and Wustof.

I started out with the JCK Original "Master Home Chef Set" and added to it based on a lot of good recommendations from the forums. After I was "done" making my ultimate knife set, I (of course) started over.

Haven't been active in the forums for a long time... Got interested again and found this forum in that I'm currently 16 months into my waiting period for my final (FINAL) knives on order from Murray. I know patience is a virtue, but I started gettin' 'itchy' - and, hey! I found you guys!

Dunno how active I'll be, but it's nice to see some old monikers...

Oh yeah, never done anything but cook for a living. I cater, have been for the past 10+years. Would love to be at a restaurant, but the money sucks. I'm looking to open my own space, but even that's a couple of years away. Do you know of anyone in our area that makes kitchen knives? Would love to check it out.

In our area that makes them no. There isn't even a good cutlery store in Charlotte, your 2 options are Williams-Sonoma and Sur La Table. The asian restaurant supply store on Tryon and Sugar Creek next to that asian supermarket has some Tojiro and Togiharu stuff but that is it. But that area is not so great.

Hey Guys,
Just wanted to Introduce myself. I'm a Cattle Farmer from Fort Payne, Al. I am an avidd fan of any type of blades. I recently began purchasing old knives and restoring them. The knives I do restore are ones that are so rough they dont have any real value, Don't worry I do research them before I begin to be sure and not destroy a hihg value knife. I Began learning to work, shape, and temper metal about a year ago. I purchased all of the necessities to begin making my own knives, unfortunately as i got to point where I was comfortable enough to begin my own knive, had a fire that destroyed my barn with a metal and wood shop. So during the rebuilding time I have begun sharpening and restoring knives. I own an edge pro, pro series sharpener. It is amazing.
But I came across this Butcher Cleaver, and know very little regarding it. It is made by Terrier Cutlery company. The little I know regarding them is they manufactured knives between 1910-1916. I have a picture of the Cleaver if anyone knows any info on it or possibly its value, I'd be appreciative.

Hello guys. I'm just starting out learning to sharpening and using carbon knives. Bought a really nice knife (http://www.japanesenaturalstones.com/Kato-Yoshiaki-Fujiwara-210mm-Gyuto-p/459.htm) and some beginner stones(500,1k,6). Also watched the movies "Korin Japaneese Knife Sharpening" and the "Muray Carter"(when doing the "honing" part in his video, my knife just get duller) a couple of times, read here in the forum, watched youtubevideos etc. I spend 10-15min every day for the last 2 months trying to sharpening my knife. But I can't get a good edge on my knife... When I got it was laser sharp, just touching the blade would make me bleed. Now I can push my finger to it. Of course, I know this takes time to learn, but what is the secrets? (I'm a bit frustrated because I really want sharp knives, and I will do what it takes to learn it) Some days I get it ok sharp, but far away from were I want it. I try to keep the angles low and the same all the timel

Is the stones I have itselft enough to have laser sharp knives?

Also, from practecing sharpening I accidental removed steel from the knife outside the edge( from to low angle I guess, and at the same time pushing the blade down). These areas are really easy to rust. Is there something you can do to remove this? Buy a finishing stone? So it can have the same finish as rest of the knife...

I'd get a pro to fix it up it for now and buy some cheap crap knives and practice on them until you are consistent. Jon Broida'a Youtube videos are some of the best I feel. Just keep at it, eventually you'll get it, just need to keep practicing. The stones sound like a good choice, but I wouldn't use the 500 very much

I have some crap SS knives and try to practice on them too, but I really just want to use my carbon knife. And since I work as a chef I dont mind using a little extra money on a knife since I use it all the time. But maybe this is harder to maintain? My experience is that the SS are easier to sharpen...

J-Nat = Japanese Natural stone. Natural occurring stones that are quarried.

Perhaps you could send the knife back to Maxim for sharpening? He is very good. I can understand that you want to use the knife right away but a little patience now will save you a lot of time later. I think generally carbon knives are easier to sharpen but there's no definitive answer. I wouldn't worry about J-Nats for a while until you are more comfortable sharpening. Hi for the first time to everyone here. I just bought a ******** laser 240 wa gyuto and have since learned reading this forum that the supplier of this knife is not particularly well received. Personal opinions of the supplier aside I would like to get peoples opinions of the knife itself. When purchasing it seemed to fit the profile of everything i was looking i.e steel quality, wa handle, size, shape and obviously sharp but am just looking for a few pointers on sharpening from anyone who owns/owned one. Thanks

hi. i am of course new to this forum and have one question that has bothered me for years. i had a set of antique kithen knives that had an unusual
stamp on them and i have never seen elsewhere sinse they were carbon steel, and were not home made, and they appealed to me and i bought them on a whim,
and lost in a move. and i am hoping to find an antique knive expert that can tell me what and where they were made/?

the stamp on the blade was what appeared to be a fireman running with a ladder, maybe french or italian, and no other mark. it was a large kitchen knife that was very well used, {sharpened down} and was clearly well loved. the handles were not rounded like the sabitier, but square, and still very sharp.there was a larger one and a smaller one.
maybe 12" and 8" blades. any feedback will be apprecieted

Aloha from the Big Island (the locals call it Hawai'i). I sold off all my kitchen gear prior to moving out here two years ago and just started rebuilding when I was introduced to a Shun 9" slicer. My first thought was "WOW!, this is a lot sharper then my Henckels were!" My second thought was "so what else is out there?" My third thought was "Damn!...why'd I spend $180 on a Shun?" Somewhere along the line I found this forum. Now I'm looking for a better job so I can buy more knives:knife:

Second hand knifes is my thing for the moment. Mora, Frost, Karlsson/nilsson mm is the most kommon on that market.

Been looking around and you guys have realy great knifes, hope to compete some day. Hehe.
