Hello, I wanted to tell you a bit more about Randy Jr. and myself.

Randy Jr. Is my 20 year old son. Last year he came to work with me in the shop and has been steadily learning and growing in his skill and ability's.. He runs the HOT side of my shop and does most of the damascus forging.

Myself, My name is Randy Haas, I started making Knives about 7 years ago. Like some I started with blade blanks and re handles. and one blade.. lead to 2, and so on..
Over the years I have added new and or better tools to my shop. and I always seem to be one tool away from having everything I want! :D

Fast forward to now, Im truly blessed to be able to work as a full time knife maker, Its my passion. And Having Randy Jr. working with me has been a dream come true.. Im a proud Papa!

Here are some pics of some of the steel that Jr. has forged over the last year. Enjoy.

Hey guys, Im looking for a blade profile for this sweet billet that I wont have to loose alot of the steel or pattern at the tip.. Any Suggestions?

WildBoar
09-09-2011, 06:30 PM
Not sure of length and height, but some possibilies would be a usuba, a nakiri, or a kiritsuke-style gyuto.

Look here for a good library of J-knives: http://zknives.com/knives/kitchen/misc/usetype/all/index.shtml

HHH Knives

WildBoar
09-09-2011, 06:43 PM
~240 mm kiritsuke-style gyuto would probably maximize the use of the billet. If you weld on non-damascus for tangs (and I don't think that you do) you could make two ~175 mm usubas or nakiris.

I'm thinking a santoku would be a more mainstream choice and keep most of the steel at the tip.

09-09-2011, 09:05 PM
Thats a very good link to have.. I spent some time over there reading. Thanks for the link David.

Santoku would be a good choice.. But I was hoping to try something new and different.. Still thinking....

How about a clip point chef knife. Like the old Herter's chef knives, nobodies seen one of them in fifty years. It would be a very unique chef knife. They look weird, but you can be the only guy on the line with one like it. I actually have used one and they work rather well. Like this one.

So this one billet is Screaming at me! Its time to figure out what to turn this into.. So far Im leaning toward a usuba. I followed a link that said these are always single grind. Is that the case? would it be better in any way as a double grind? What is the main use of a usuba? Or What would you use one for in your kitchen? :scratchhead:

Heres what the site said about the profile and acceptable blade sizes etc..
Characteristics
Typically a Single Grind knife.
Common Blade Length - 210-240mm(8.27-9.45")
Blade Length Range - 210-240mm(8.27-9.45")

Does anyone have any other photos of this style knife? I wanted to do a Western.wa handle. leaving the tang running through the handle, Ala, Delbert Ealy. But need a better picture or 5 to get a better feel for the blade profile. Yea, I know its a simple rectangle with a handle.. But its so much more then that!

I also see a sharpening video and the knife he was sharpening was similar to this usuba yet different. seemed to have a belly starting about 1 to 2 inches from the tip or front of the knife.. and it didnt look like the flat area at the front was sharp.. I cant seem to find the video again.. What is this style knife called?

SpikeC
10-02-2011, 04:49 PM
Nikiri. A little shorted and double beveled. They are both veggie knives.

HHH Knives
10-02-2011, 05:21 PM
Spike, Thank you brother.. Thats what I was looking for! What if any are the benefits of the single bevel over the double?

SpikeC
10-02-2011, 05:59 PM
The single can be made sharper, but is more difficult to "steer" in the cut, so requires the development of technique. The double is arguably easier to sharpen, but ends up with a more obtuse edge. The usuba usually has a hollow ground off side, making it more difficult to make properly.
I'm sure that others will chime in with more comprehensive information!

I love the pattern. Whatever you make, I'd like to see it AND don't waste it on a rough draft, single bevel knife. It would need to be pretty thick, anyway to really get an usuba (or any other single bevel knife) out of it.

HHH Knives
10-04-2011, 03:07 PM
Thank TK, I wont try a single bevel with this one! Its a thin billet, 2.5mm thick at this point. and by the time I work it, the thickness will be closer to 2 or 2.2mm at the spine.

So far Im leaning toward a Nikiri profile. So I can keep as much of the pattern as possible. yet Im not 100% sure. Still looking for more references to size and thickness etc. As well as a good pic to reference. I would like to try and make it as close to traditional as far as the blade profile and size etc. as possible. Just read about a Carter. and think I may try and make something similar. :D

This is a pattern Randy Jr. can and will make again. So maybe we will make a thicker billet at some point to do a single bevel grind..

Thanks for the post tk59. I will post pics of whatever I make from it!! :)

TB Thanks much for the complement on th knife. That billet you asked about. that I called Kaleidoscope is a smaller piece and wont work for a Nakiri. :( Its only 5 1/2 inches long and 1 1/4 wide. I was planning on using it for a small EDC fixed blade or a nice pocket knife blade. ?

I finally did it, I profiled that billet of Spirograph into a awesome looking nakiri.. If it makes it through Heat Treat Ill post some pics later tonight or tomorrow. After doing as much research as possible about the profile and looking at hundreds of pics from factory knives to J knives to customs.. I went for it!! :)

It went agents every fiber in my being to make the knife profile without a tip. or should I say a pointed tip. lol Anyways. Its got a gentle roll on the board and looks like t will really preform well.. And that's what its all about..

Thanks guys for the advise and info in this.

Whats on the bench today?!?! Some cool stuff, Thats what. From the top. we have a 1095 HC Gyuto, then a stainless core high carbon clad Gyuto!! Then a feather pattern petty, a damascus filet and finally a damascus nakiri..:D

Woohooo! :spin chair: It made it through HT and is on my bench waiting in line for me to grind the bevels in and add handles. Please take a look at the blade profile on the Nakiri and give me your feedback or thoughts. If it needs adjustment now is the time to do it. Not after I grind the bevels. :bat:

I also added a pic of the san mia line on the Gyuto. This was Jr's first stainless san mai clad with damascus. and Im pretty stoked! The knife is not spoken for yet. Its AEB-L core and a high layer random pattern damascus cladding.

The feather pattern petty is for a member here on the board. Im really pleased with the pattern and the blade profile was based off a Shigefusa. And has a amazing feel on the board. :)

Thanks for checking out the thread. Comments are encouraged and welcomed. :idea2:

I posted a few pictures on this thread. Anyways. I bet him he couldnt do it again, and this is what he made me.. :) Looks like I owe him lunch... Again.. lolol :D

The coolest part about these is they are LARGE billets, Kitchen knife sized pieces that are not spoken for yet.. So if you want to have the first knife ever made from this new pattern.. The option is available! There I go trying to be a sales man again.. The real reason for my post is to brag on Randy Jr. and his forging ability's.

Another outstanding piece of work Randy. Got a question about the edge profile. Why does the edge curve upward from the heel before returning back to the normal profile? I've seen other knives with the same profile, but I've never been able to ask why it's done that way.

HHH Knives
04-13-2012, 10:17 AM
Thanks man!

Thats a good question!!
A recurve is basically when the blade has something of an "S" shape in it, usually creating a big belly that helps the knife excel at slicing and chopping. The recurve also creates a bit of a forward angle on the edge allowing a regular drop point with a recurve to excel at draw-cuts.

This is just a few examples of why we make a recurve blade shape for a camp knife, and or a hunting knives and choppers.

Jr has been whooping up some great looking steel for us to play with! There has been many patterns that we have seen that have eluded us. things that some guys are doing with steel is just at otherworldly levels! And I have the utmost respect for them and what they have done and are still doing! Hats off to ya fellas if your reading!

My boy and I have talked about this pattern for some time. we have drawn it on paper, and argued about the way its done, and what would make it work and look right. After a couple years, Jr. came to me this week and asked me if he could take the time and try it. Of course I said YES!!

What am I talking about. Ill leave that for you guys to determine.. Its not feather! lol yet a feather in Jr's cap. ;)

At the end of the week Im proud of Jr. He worked hard, and it took him some time and effort, tweaking to Get R Done. But overall. HE DID IT! We wont get to see it till Monday when we clean the bar up and get a good look at the pattern!!! Im thinking based on Jr's record. and what I can see in the photo.. Its gona be AWESOME!!!!

Here are some images!

Stay Sharp my friends!

I have been busy as ever working on some folders and some very exiting new orders that will be a blast to make. All the while, Jr. has been forging samascus billets for our stock/inventory and today he brough in over 20 billets of damascua and san mai steel for me to add to the web site and sell on the forums! As if I didnt have enough to do. I took some pictures and started to process of listing these on the interweb! Phew..

Here are some images of some of the cooler and or newer patterns!
