So I only worked in a pro kitchen for a few months, and never had to do a brunoise. I thought the way he did it was pretty much how you ought to? I mean sure he was slow and only doing a tiny piece at a time. What am I missing? I thought you were supposed to actually peal out the leaves of an onion for a brunoise?

to be fair, that's what coarse Arkansas stones sound like. that technique is just begging for edge holes, though. really nice.

That's exactly what I was thinking...I could see this being a brain fart and just saying the wrong word...but I'd also expect some kind of correction in the noes and didn't find one. OTOH, he did describe it as "high carbon steel" in one of the comments.

I don't see this as belonging with the knuckle heads, I like the guy from America's test kitchen and think he did an excellent job describing the options available to sharpen a knife. I realize that to members of this site it may seem sacrilege to use a chefs choice but for 99% of households it would be a huge improvement, even the $12 hand held thing would be an improvement. Most people never sharpen their knives, and I mean never, my parents for one have had basically the same knives for 25 years without so much as owning a honing rod let alone a way to sharpen. This video is direct at people like them, and for that I think it's perfect.

There's nothing wrong with using a chefs pro or a accusharp on a soft-steel knife to sharpen it. Stones are wasted unless you are THINNING and sharpening.

I admire Kimball for making a cook book empire and a fairly competent test kitchen. I've used a lot of his recipes for myself, friends and clients that have turned out very well, and have learned a lot from his team/show/magazines/books over the years... but at the end of the day, he really is a major D'Bag.

I've tried to be a kinder, gentler, nicer mpp over the years, but I still can't get past my aversions to him personally.

OTOH, he's not even in the same class of D'Bags as Good 'Ole "Chef Here". He and Sir Richard Blaine share a special place in the stratosphere of d'bagness.

Dont know about maple in particular but wood in general has antibacterial properties so if you dont scrub plastic like hell and use bleach it is going to be worse than wood [Because of what stays in the deeper scratches]

There are a number of studies that confirm this...one of the "gotchas" is that the wooden board needs to completely dry out between uses though.

Lessons learned:

No carbon--it's cheap and won't hold an edge...good knife is high carbon stainless.

My wa handles don't have full tang--I've been getting some misinformation around here.

Oh yeah and 20* is the right angle to use--guess my problem all along could've been fixed by one video.

That's either a factory overgrind or the sharpener jumped over that section (which is a common thing for beginners to do in the curve). Either way it's pointing out a problem and should not have passed by the QC check.

He is not bad with a knife, skills probably better than mine. I just can't stand how ever video I watch is the best knife on the site. He sells some good knives, but they are far from the overwhelmingly positive reviews that two guys always seems to make. Salty can make a Chroma fall through tomatoes and onions....

I know I would not, and I don't charge people to sharpen like this guy does, which "should" make him feel more responsibility for the obvious lack of QC,

I started to ask if that looked like it was done with an EP or a WEP system. The bevel doesn't look free handed to me, and that would make sense why the overgrind came out so noticeably.

Just to clarify something for you guys, Sean did the grind on these knives as well as the sharpening. From what I gathered from the other forum's thread leading up to the release of these knives, they were being shipped from the maker to Sean, who was doing the final grind and sharpening himself. That's partly why they took so long to get to market.

I bought a 52100 version when they first came out. So many things wrong with it, including the grind and the sharpening (which was one of the worst sharpening jobs I've ever seen - those guys in vans with grinders do a better job), I sent it back. If it was a $100 maybe I could see it, but not for a $200 knife. I have nothing against Sean personally.

This makes more sense - the overgrinds didn't look like robot work.

This poor woman really doesn't know anything about cooking. She's just a product rep for the company that designed/produces this kitchen concept. She's just walking through a rehearsed procedure to demonstrate how a typical home cook might make such a horrible meal in their kitchen set-up. They could have easily gotten a real/decent chef in there to actaully cook, but then again they may not want to intimidate the typical home-maker that doesn't have any cooking skills.

It is a pretty cool kitchen concept, but some of things are too over-thought and over-designed for less-important tasks. I love the idea of the big prep sink next to the range top, but that's where I find things too fussy and unnecessary; such as the sliding colander and pasta bowl. And then think about scrubbing down that gigantic sink and all of those little slidey bits at the end of the night!

There's some good ideas, but it's a high-end Euro kitchen company over-thinking the basics of cooking & prep for people that have a lot of money to blow on their kitchens that will never get used.

I teach some cooking classes for a local non-profit...occasionally someone calls me chef during those classes. I never say anything as it's not the right time, but it bugs the crap out of me. Ive never worked a minute in a restaurant, much less a line, much less run one. People just have no clue anymore. They think that because everyone is entitled to an opinion, all opinions must carry the same weight and value.

I had a recessed sink in my last apartment and I really liked being able to get my cutting board right up to the edge / over the edge. I grew up with a commercial kitchen sink that had 2 side-by side bowls that where each big enough for a hotel pan and deep enough to soak any size pot. It's one of the things that I miss most and a must-have for when I build my own kitchen in my next home.

I think that that the galley sink is a cool idea, but for between $3800 and $7000... you could get some custom fabrication done that would be way cooler.

I definitely agree with you, but nowadays there are even some kitchens where all kitchen staff refer to one another as "chef." That bothers me, chef is a french word, it means boss...if everyone is leading the brigade than I don't know who to listen to.

It's great how he doesn't actually utilize it as a proper slicer. He starts all of his cuts about 1/2-2/3 up the blade and saws with a quick motion, only using about a 1/3 of the edge...

Oh boy, this is funny, but I also don't know how I feel about this.

My first (and only) restaurant job was a dishwasher at a restaurant and I replaced someone who was on one of those disabled work programs. Anyhow, they hired me on the spot and I asked about the guy I replaced as they said they just fired someone. Well, he had a learning disability and when dishes would back up, he would calmly load up a couple of racks of glasses and then proceed to hurl them at wall, smashing everything. The cook told me, "As long as you don't do that you'll be fine." High standards, and there is nothing that boosts someone's self esteem more than working a job that was previously held by someone who was mentally handicapped. I was on my way.

Anyhow, this doesn't count as kitchen-related, but Tosh.o will be featuring it next week. At first, it kind of made me think of the pineapple video by Mr. KnifeFan, but for us knife knuts, there is always a bit of ninja virgin in all of us. Just try bringing up your knife fascination on a date some time ;)

Love that one, the funniest of all is how she was looking for band-aids for 3/4 of the video and the lingo, she seemed a bit worried.. never occurred to her that she might end up stabbing herself to be prepared in that case.
It must be tough to be a teenager and have nothing to do with your time, all kinds of "great" ides come to mind.

wouldn't do it with any of the knives i have. even on my SAKs i have, they're all as sharp as i can get them. they're gonna cut me bad, real bad.
