Tongues may play tricks on you.
There was a big controversy in Japan few years back where kaiten-sushi (http://en.wikipedia.org/wiki/Kaiten_sushi)
restaurants would serve Tilapia disguised as red snapper.
(Red snapper is like 10 or 20 times more expensive compared to Tilapia).
The host nation of sushi ate those Tilapias up for years thinking that they were red snappers.
I've eaten the two side by side and they taste very similar indeed.

On another note, I've seen people use yanagiba for carving meat on at least two different demonstrations.
Is that common thing to do now?
I just use my flexible carving knife, but I might have to bring out the big boy for next roast beef day or Thanksgivings.

Did anybody else cringe at 5:53 when he scraped the tip across the board when he cut the skin? This has to be one of the worst filet jobs I have ever seen. And that is including a particularly nasty occasion back in culinary school when a fellow student thought it would be a brilliant idea to filet a fish with their $5 serrated knife she bought from wal-mart.

I especially like how the knife that he has just made so sharp that it can cut a tomato is suddenly not sharp enough to even touch the pumpkin, until he sharpens it again. I have ordered 10 of these things - 9 to give as gifts.

I've been to the school that produced this guy for an ACF culinary competion in Madison. Nice school, no idea why someone would select this guy to demo his knives. Lot's more talent there.

edit:

also, over the past few days my culinary school competed in the same regional competition as this one. Part of the skills competition is filleting a fish, saving the head and spine for compost, while pullling pin bones. Our girl perfectly blew throuh her two trout (whith ****** knives mind you) in four minutes. One judge came over to her and started singing "this girl is on fire!" by Alecia Keyes.

I will be the first to admit I am not the sharpest knife in the drawer but good lord, the guy with the axe has a complete and utter disregard for physics lol! How did he ever expect to get that axe dislodged doing what he did :beatinghead::beatinghead::beatinghead::beatinghea d: .

He isn't the worst, but far from good. The cuts aren't clean. The bellies show the lines from constantly trimming and re-trimming. Look at the belly around 3:50, you can see all the different cuts. Kinda like a bad haircut. Sloppy for a pro, good for an amateur, not 100% knuckle-headed.

I may be a little pedantic.. but fish work is one thing I love doing, especially Salmon, I would not let this guy near any of mine.
I've done quite a bit of salmon, usually around the 5-6kg weight, which costs around $95 each at the moment im only doing about 5-6 a week as I'm only using it in a salad, cured then smoked, then finished over charcoal and dressed with a galangal and green chilli dressing..

Anyway my opinion..
About 1:08, sawing through the spine.
1:40, multiple passes on the belly, you can see clearly at 1:50.
At 2:00 it looks like a mess, if one of my guys brought that to me I'd be pissed. Same as the other side at 3:47.

My knucklehead is in regards to him even putting it online.

@theory, I like your salmon redux vid, I like how you've changed over time.

Wish I had a camera to record my technique..

Yeah, I film with my Nexus phone. Not the greatest, dull colors and poor low light performance sometimes but still 1080p so whatevs.

It takes calls and sms, I wanted to break the smartphone addiction, so this is too big for my pockets, it's nice to be without a phone, I hate that a table of people all on their phones not talking to each other is a social norm.

-measuring FAIL, how much salt WAS that?
-laughable coordination: in the huge kitchen they kept bumping into eachother.... good thing there were no knives involved

Oh yes, i guess i should have made that clearer. I was referring to BRKT and the master knucklehead that murderer the knife on the grinder. Seen in the 2nd vid.

Its interesting how these bozos (Kenny&co) clump together and how anyone with half a brain and the ability to smell bs comes to the same conclusions about them.

I get that the guy isn't cooling the blade often enough. But should he have quenched it every time he looked at the scratch patterns? Or just more often? I'm kinda surprised they don't make a hand held clamp that keeps the knife cool, like a glycol cooled.

That is one strange interpretation of a Japanese knife. I also don't understand what I was supposed to learn from the video? Any semi-sharp knife will cut raw meat, sort of? If I watch a video I want to see someone with far more skill than I have. This certainly wasn't it.

Lighting is fantastic too: really adds to the "something very disturbing is about to happen" vibe.

That hot mess is the result of Ken setting up a show 'n tell of his infamous Gizmo Precise Knife Sharpening Device. Yeah I kid you not, he was actually trying to sell those things using that mess as a sales tool. I believe he spent an hour + trying to cut a bevel on one side of a knife. In the process someone snapped this tragic and timeless photo for internet posterity (I recall Ken was pissed that it got posted). Somehow it always puts a smile on my face to think about Ken and the good times we had. :D

I always feel sorry for the food in his videos.

For all intensive purposes, this guy looks like a a nice, entertaining fellow, but I had to laugh at his response when Theory and I commented on the vidoe:


This was an out-take recorded live and without any retakes. Hence not the best demonstration around! Its really intended to show off the chopping knife rather than demonstrate a competent technique for chopping a Spanish onion!

I know of a few hippy dippy types with exactly this same attitude in life, and having just a touch of information to make them dangerous. One does so in studio design (acoustics) and lacks even the most basic knowledge. Worst part people pay him. Other one is of very strong opinion in IT and likes to go against me, except I have 20 years consulting experience, degree, certifications, etc, and he has a lot of weed and some friends.

It truly is scary and not needed, and this is partly why I am always reading through the forum, with not much to say yet.

It starts getting good at 3:00. Check out 9:24 for her tips on taking down a Onion. Look at that sawing motion. Pretty generous portion of tips cut off too. Something tells me that **** would not fly in ThEoRy or Chuck's kitchen.


Its obvious that she doesn't use sharpening the stones. What a bute. so this this is the cutting technique that they teach at one of the worlds finese Culinary school in the world? Please, somebody save meh! ;-)

Oh my. That cooking with Jack show will always make me laugh. There was a time about 100 years ago up thread that I think Justin0505 posted one of his reviews of the Yoshi Blade ceramic knife. I laugh my as$ off every time I think about it. Watch from the 7 minute mark. There is other stupid sh!t before that, but it is golden when someone chips a blade and doesn't understand what's going on. What this means in reality is that...he keeps sawing a wooden spoon with a ceramic knife.

Miyabi knives have good blade profiles. I'm not a fan of the D-shaped Miyabi handles. The Miyabi 600 series knives are my favorite production knife from a large company. They also have good blade geometry. I don't like the big Morimoto stamp, but the signature Morimoto 600MC with stabilized amboyna burl handles and SG-2 is a solid performer. A real pleasure to use! But the sales pitch would come better delivered by a real chef with real chops.

Hmmm...you want to use a wooden cutting board because it retains the tomato juice which you can use for other recipes. So, a wooden cutting board is like a sponge/Tupperware combo then? Next time I carve some proteins I'll have to remember to wring the jus out of the board when I'm finished.

The finish on the large bevel looks like ****...did prove that he didn't have a wire edge though which makes that the best video I've ever seen him do. :laugh:
