After a lot of thinning with a few yo knives, I restored the balance by removing some material from the handle, in fact by shortening it somewhat. Is this a common practice?

No idea but I just did that to an old knife, myself. I think it's turning out well, all things considered.

I've never heard of someone doing that; I'm guessing you removed quite a substantial amount of material from the blade

I've never heard of that either. Even in knives where I thinned a third up the blade face, the overall balance of the knife was not really effected.

What knives did you thin, how severe did you go, and how many grams do you think you removed?

I'm speaking about removing a few milimeters in order to move the balance point a few milimeters as well. I like to have it just in front of where I grip the blade. I haven't measured the material loss yet, but the weight does not seem to be affected noticeably.
