Just wondering what you have on deck for the next round of ITK knives? Are you going to restock some existing models are introduce some new ones?

I picked up on of the 210mm gyoto's you made recently and loved it. For small veg prep and delicate cuts it's amazing, it's just so agile. I wonder if your interested in making a 210mm santoku or kiritsuke?

I just sent them ten 270mm with wa handles. Four petty's will go out today. Next up will be sujihiki's and some western handled gyuto's.

Glad you like the 210, I really like that size for some reason.

I just got one of the pettys, have not used it much yet, but fits well in the hand and seems very nimble. Very nice as expected.

We are going to the Vegas show next month and I think that we will try one for the show.
