Also known as a gyuto/deba. A good heavy duty knife for cutting meat with bones, breaking down the Thanksgiving turkey and splitting lobsters. Can probably also be used to cut down the occasional sapling.

The spine measures 5.2 mm above the heel and it weighs 353 g.

Not quite NIB, as it has been used twice to cut apart a rack of BBQ ribs. The OOTB edge was more than sufficient so it has not been sharpened or stropped. No patina to speak of.

Yes, it has a dragon!

Still available.

For clarification, this is a double-bevel Western deba, not a single-bevel traditional deba.

I could be wrong but that last pic looks like it is single bevel.

No, it's not a single-bevel knife. Here are a couple more pics, one showing the small bevel on the "back" of the blade, and one from the rear of the blade, showing the geometry:

Here are the same two angles of a single-bevel traditional deba:

Hope this answers your question.

Ty for posting that. It is still very small to see on the back side without the blade shot. Btw nice shots those are tough pics to get.

That's cause it's asymmetric with different angles. Arigatō!
