That was amazing. I love these small farmers that really care about the animals they raise and the produce they grow. I can't wait for summer when my chef gives me the credit card and lets me run wild with it in the farmers market.

To be honest, I can appreciate the effort but..................it's , ah, hmmm,,,,, someone who is overly into trends and food might try and if he kids himself enough, might enjoy it. Just my opinion. Imagination is a great thing to a certain point. But if you can sell it to the hipsters it doesn't matter.

i agree with both sides. I posted it more for the appreciated of his dedication, precision, accuracy, and passion... the end result wasnt all that fantastic, but he really showed something beyond the ordinary execution wise..my $.02

In fact, i tend to think it would yield less than peeling it down with a knife until you've shaved off the eyes. Unless you're putting it out for decoration on a buffet, I don't really see the point, other than it makes money from tourists.

Yeah, I cut the skins off a little deeper than that shaver does obviously but then they gouge out those eyes rather deeply themselves. The way I see it, I'm peeled and diced in under a minute. If I waste 25 cents worth of pineapple to save 35 cents worth of time, I'm still up. Time is money y'all.

I have always been cutting my pineapple that way. The rational behind that method is that they say the sweetest part of a ripe pineapple is right under the skin. So if you cut too deep your cutting the sweetest part away. As far as I can tell most asians do the spiral cut thing with a knife or a V-shaped cutter.

I've always done it like Theory does, granted he's going fast and not aiming for the ultimate yield. And he's right, in a restaurant, it's always a balance of speed/accuracy and finding the sweet spot to work in. Saving 10 minutes on pineapple at an increased cost of (for example) $.20/# that gives you an extra 10 minutes to spend cleaning expensive protiens is probably time & money well spent.

But that's the beauty of the business and the many different ways of doing things, I can learn something every day. I'm going to try the "corkscrew" carving method and see if I taste a difference. Because in the end, I think we'll all pay a little more for better flavor.

Agreed, in a commercial setting spiral cutting pineapples wouldn't offer much cost/benefit. I can't imagine going though 10-20 pineapple a day.
Being a home cook does offer the flexibly to play with your food. As well coming from the frozen north, a good ripe pineapple is hard to find, gotta savor every bite when you don't know if the next one will be any good !

They are very cool things for sure. The IRS gyros in aircraft are very nice to have but they have since been replaced with laser ring gyros since they take next to know time to align as apposed to the old systems.

There are a ton of really cool gyro vids on youtoube....Ive spent hours watching them. Also had one very similar to the on in this vid....did pretty much all these demos with it. Fun stuff.

You can use a bike wheel to make an improvised one at home.

My grandfather, who was/still is when the Alzheimer's givs him a good day, an amazing woodworker, stopped his. He would take the blades out and strop them before every use, and after about an hour of using. He gave me his planes when I was a kid, most of them made by him (wood parts,) and they are still some of the sharpest blades I've ever seen. He could get really thin cuts, but nothing that thin. That's crazy.

I once bumped the blade of one when oiling it for him when I was about 12, and ended up with 6 stitches and nerve damage in my left thumb. All with little to no pressure at all. I didn't even feel it, even after it started gushing.

We saw this movie last night and it was really beautiful. I can't recommend it highly enough for anyone interested in sushi. Some lovely knives on show but really just beautifully filmed and edited and the colours are gorgeous. It was filmed on the RED system according to the credits, if anyone is interested in that. A must see.


I must admit that I haven't read this entire thread - only managed through to about page 10 so far, so I don't know if this has been linked yet. Trailer for the film JIRO DREAMS OF SUSHI about supposedly the worlds greatest itamae (?), who has a 3 Michelin starred sushi restaurant in a Tokyo tube station.... I think the DVD is being released on 4th March. Haven't seen it yet but it is on our LOVEFILM list....

I think he fairly qualifies as "awesome"

My Kato is cutting potatoes even better when they're cold:D I have Kono HD which is worse cutter.

Exactly. Kato has more material for convex/concaving. I'm not familiar with the particulars on the grind but I have seen them up close and there's definitely more to work with.

My Japanese is getting better; I heard the word "oyster." :) When he goes through it again he is at about 2 1/2 minutes for the process which is not Martin Yang (ok by me) but the precision and relaxed approach are really nice.

That chicken video is awesome. I have watched A LOT of videos on the topic and seen plenty of different examples of slightly different, but still very good technique, but that one had far and away the best instruction and camera work that I've ever seen. Understanding Japanese was not necessary to understand what he was showing. I would say that it's right up there with Pepin's chicken ballotine video. This video improved my technique, but also improved my teaching.

I'm a fan of Hiro. And the mystery has been revealed - he uses Kikuichi Warikomi Gold 210 sujihiki. I thought it was a Masamoto CT. And yeah while I like the guys, it's obviously not the sharpest knife in the world (if there is such a thing), and probably not the best (if there is such a thing). But he likes it, and he's darn good with. I do like that it's a tall-ish suji.

Wow, that's the most impressive thing I've seen in a long time. I've done a bit of ceramics and seen some talented folks, but this just blew my mind. Some incredible technical finesse that was just glazed over like it aint no thang. Just her control over that pattern and how she's able to get it into a homogeneous slab without structual flaws or air bubbles without distorting it...
I wish they had shown more of how she made the original template pot from which the mold was cast. Getting the 2 halves back together evenly and symmetrically after taking the impression from the original shell would have been cool to see.

Where's tgraypots? He would appreciate this.
