View Full Version : Takamura Suminagashi vs Blazen differences

Does anyone know if there is a difference in the hardness or quality of the hagane in the Takamura Blazen versus a Takamura Suminagashi? Are the forging processes different? Visibly, they appear to be identical except for the damascus etching. However, the Chefsarmoury.com website quotes a HRC of 63 for the Blazen and 65 for the Suminagashi.

I own several Takamura Hana series knives (Suminagashi with octagonal handle) and they are great performers. I don't abuse them and haven't encountered chipping, so I'm just curious if there are intrinsic differences in the hagane. The Chefsarmoury.com site quotes a HRC of 62 for the Hana (octagonal). I have no idea where they got this information or whether it's accurate.

this is my 240 takamura blazen i got today. first impressions of it was that it was much heavier than your regular japanese chefs knife which i like and also not flexible at all. handle feels great too! not sure how these knives would compare too other blazens and other takamura knives... let me know if anyone has ever used one of these and tell me what you think about them.

sorry for the image quality... dunno if you guys can see but the label has the takamura logo instead of just the blazen logo which all the other blazens iv seen have

Nice Knife, though. When lasers became so popular many forgot about the Blazen. Great steel, solid fit and finish; a serious work horse!

I've got a takamura suminigashi and it takes a great edge that I haven't found prone to chipping. Not used a Blazen to compare it to though unfortunately
