Wondered if anyone has read it, it was written by Thom Leonard. I worked with him as a pastry chef years ago..

No, but it sounds interesting. Our library has it and I just put a hold on it.

I use the bread bakers apprentice by peter reinhardt

he is truly a master bread baker and makes amazing bread sculptures, but i am going to check this book out i love baking bread.

Thom Leonard is a really hard core bread man. They had an episode on the history or discovery chnl on him/bread, never watched it..I worked with him and chef Charles Rascoll at Wheatfields Bakery (Kansas). Charles worked the kitchen and I worked the pastry shop.
