I'm the executive chef there. We have a manhattan style eatery, but most of our buisness is off premise catering then we provide the food to our cafe, cafeteria and our deli.

Cool, I agree with EagleRock, I have kitchen envy. That is the biggest kitchen I have seen in a long time.

Nice video - I have a bunch of eye of round in the freezer I'll give that a go. What's your roasting like? I usually just season mine, put into a blazing hot oven then turn it off after 20 minutes and leave it for @ 2.5hrs.

That's probably right. I sear it then 275 covered for 2.5 to 3 hours

I've done pork loin roast like this , never eye round. Did you braise it or roast it all the way through ? You made it look nice and easy. I'm now a subscriber. Great job.
