Which CCK Butcher's knife did you get? Often on CCk's the edge grind is a bit rough. I have thinned & polished out the scratches, did it with a table
Yep - I would not get $400 knife as my first Japanese knife. The advice above is a sound one. Also check out Yoshikane SKD knives or Zakuri in super blue
Is that a crack on the second picture? I can't see it on the top picture.
