I sharpen my zdp 189 knives (cermax, 7000 mc) with a primary bevel of 7.5 deg and a microbevel of 15 deg. No chipping issues at such angle.
I loooooove my gesshin ginga stainless 210 petty. Perfect on the line and silver skin mutilator. JUST RIDICULOUS

I have been using a JCK house brand Fu-Rin-Ka-Zin 180 petty for a couple of years as my go to satay prep knife. Very happy with it.
Unless you do half of it in French!
