Couldn't agree more about rasps (and other hand tools) with Stefan. Good rasps turn making of western handles from PITA to pleasure.

Why wouldn't you be able to cook a steak under vacuum?
I never thought you could sou vide a steak either but I guess it's worth trying for the even texture.
I love kimchi. As for fermented seafood they're everywhere in southeast Asian cuisine. You can't cook without fermented or dried shrimp.
