    Starting freehand ?

    The K-series by Herder are nice but a bit expensive. I do believe they reach the HRC60. Their edge retention is just as good or as bad as that of a Misono

    I would only say that Herder carbon knives are super easy to sharpen (I have the K2 model on loan right now) - as they are VERY thin and apparently not
