    Chinese chef knife (cleaver)

Yeah, I just looked at the Suien VC and I might go that direction, though i read from a lot of people that the handle is really uncomfortable. I'm not sure if they are using the pinch grip, but it seems like if you use the grip you suggested the "Peace" sign grip, which is what I'll be using...

    Chinese chef knife (cleaver)

Which way to go....Chinese or Japanese?

I decided to go with the CCk full sized cleaver, I know it's big but i like the look of it and it's carbon. Now can any of you recommend a sharpening system? I want to learn to sharpen on a whetstone setup.

Which way to go....Chinese or Japanese?

Wow, thanks everyone for your input! I do think a Chinese chef knife is the way to go for me listening to everything you just said Jay. I just stumbled upon these two cheaper models as well, they aren't full size which I thought might be a nice next step...

Which way to go....Chinese or Japanese?

Hey Folks! I'm super excited to have just found this forum to start learning more about knives and perhaps get some advice. I'm a home cook that has always used cheapo $5 "kiwi" knives from the Asian market and have been happy until recently. I would like to have a higher quality knife...
