    I would view the Takamura to be more of a 'laser'is knife and the Misono to be more of a general knife. Both amazingly sharp. I own the Misono and the Takamura's been on my "want" list since day 1. Looking for the excuse! :-) I have abused the Misono carbon a LOT and it's not rusted...

    Easy: Misono Swedish Carbon Steel "Dragon" 240mm. Are we allowed a paring knife and a slicer? Because between those 3 I'd be set! And I assume my sharpening stones were not missing? Considering I'd have lost all my knives, so clearly has some issues, I wouldn't spend much more than...

    Out of curiosity ... why would you want to do that? I am not arguing, just genuinely curious. Seems finding a place with power tools will be your best bet. I am sure that there are places in NYC that can oblige.

    Help! What am I doing wrong to my carbon steel knives?

    I have a Misono Dragon - it patinas silly easy, and is brownish, but it isn't rust. I got a rust spot on the blade at one point, which is also brown (reddish brown), but looked different. I could easily have used your words to describe either. Can you post a picture?

    Before getting the knives above, have a visit to Korin in NYC - they can probably get you kitted out. Why do you want to get a Santuko AND a Chef Knife? One good one should be able to do all you want to do.

    I'll agree the knife looks pretty cool. What I learned here was there is a whole world of Japanese knives that is well beyond Shun, Global and others. Welcome to the forums!!
