I own several knives: Wüsthof 8" and 9". Henckels utility 5", santoku 7". Yanagiba Sekiriryu, Coqueiro Picanheira 8", Yarch damascus slicer 9" and some handcrafted ones like cleaver and chef damascus 7 1/2". I am a amateur chef and use all them in my kitchen. To sharpen I use a Wusthof sharpener black and a red (for oriental knives). Sharpening stones are japanese, grit 1000 and a diamant coated one. Sharpening rods in steel and ceramic.
