A lot of folks here would probably poop themselves if they saw what angles they are ACTUALLY creating rather what they are imagining.
A lot of 10dps chest beating, machismo is going to evaporate when guys see some laser reflection patterns on that "10dps" showing...
Freehand produces convexity, you're never going to get an exact angle with that method and that's not what is holding you back.
Free handing is about consistency and good consistency will naturally blend the angles from the shoulder of the bevel to the apex. (Not blending into the grind)

Gunny Juice has been the best I've used so far.

Each of those dark spots is a carbide at 87rc at 1-2um in size.
This was an incredible edge from Gunny Juice.
If it could make an edge like this on an extreme material it should be able to eat everything.
Interesting. I found it was the opposite. The simple carbon steels are more prone to developing plate martensite since the cementite dissolves rapidly past Ac1 easily putting too much carbon solution if a proper time and temperature isn't selected.

Some Color etch metallography I did of CPM 15V.
Cream colored vanadium carbides in a blue matrix of tempered martensite.
CPM 15V edge at high magnification. Carbides have been exposed from matrix with sharpening technique, this increases aggression. Carbides are ~3um average size.
