    Tilman Leder Niolox Wa-Gyuto

No to side track this thread and man what a knife but does anyone have a website for Tilman ? Really would consider getting one made, and very interesting if he is in Germany.

A Tale of Two Blades- Miyabi 7000D versus 7000MC

You know even though I do not have my Wantanabe anymore from memory I think I agree, sort of. I have my 7000D with a bit more aggressive edge than originally and it is pretty darn serious. Still as mentioned many times by others i can't get that atom cutting carbon edge as easily (or if) on...

    Mayabi 7000MC Broken tip

**Update: I had to do a decent sharpening session as the blade also had a pretty good amount of chipping. In the end the tip came out ok but it won't be back in line for a few more sessions. Still it is now barely showing so everyone was right that it was not so huge. Wow I always forget how...

    Mayabi 7000MC Broken tip

Thanks guys for all the information. I was also considering using a diamond stone as they seem to cut really well on the harder steel. I know this knife takes a bit of work even on my King and Naiwa stones when I am just tuning this up, but a year later with my brother in law and well you see...

    Mayabi 7000MC Broken tip

Any suggestions at what grit and stones to start with? I rarely go below 800 in my house and actually usually 1K. For me its a big chip :)

    Mayabi 7000MC Broken tip

Ahhh, I guess sooner or later this day would come, and after seeing some micro-chipping I had this knife brought over for the horror of the tip pretty much missing. As you can see in the picture below it looks pretty large but I am wondering if this can be repaired? I guess if it is sharpened...

NAIWA, KING, 1-10K Stones write-up on my daily go to stones

@ Peter, You might be correct and this is just my experience with these stones so far over the last two years. I hope more people will also chime in, as this is why I write these articles as I think the more experiences are shared the better it is for everyone.

NAIWA, KING, 1-10K Stones write-up on my daily go to stones

Greetings everyone, Here is just another quick write-up on the 3 stones I have been using that have stood the test of time in my collection. By no means am I saying this is an absolute authority on what must be used but I think it is fairly practical (?). Feel free to have a read, and of...

Mechanika III http://www.dersnap.com/snap-tools/kitchen-snap-wake-up-and-smell-the-espresso-ecm-espresso-machine-360.html If they had a second one I would have snapped it up in a second for the office. Never found a deal similar, but then again I have not been looking hard anymore as I am...

    Coffee gear and discussion thread

My philosophy on this subject is simple: If the first thing you can start your day off is with the absolute best coffee, and hopefully breakfast that even the richest man in the world might not have, then it is a good start. Puts one into a good ritual of a fine art that I feel sets the pace. I...

I was also looking at the Expobar but i got my ECM for about 800 Euros. It was a floor model that never got used, and people would rather have spent 3K euro for terrible automatic machines than the only good machine in the whole city. Loved it ever since.

20 thousand KM over last 5 years on my king hubs, second set of rims now just because I changed from 29er size to 650b. It simply amazes me how precision the engineering is on them, and when I did a rebuild last year for cleaning how great they really are on the inside. Besides that Chris King...
