    関住唯知郎作 It means Ichiro(唯知郎), who lives(住) in Seki(関), made it(作). Is it a Hattori knife?

    Indians are probably the best in the world at cutting onions. they don't seem to do "horizontal" cuts. and that method seems to make sense. At a higher level, you don't even need a cutting board.

    I have never used SG in Japan because they are too expensive(SP2k $28, SG2k $85, NP3k $70). According to Shapton, the recently released Rockstar, is basically the same as the SG. It is twice as thick and less than 1/2 the price.

    Both stones will give you a biting edge. Ouka is even softer and creamier than SP. It's more fun to try different types of stones, so let's go with ouka!

    I have seen many people who, after trying many grinding stones such as 3000, 5000, 6000, 8000, 12000, etc., end up using only up to 3000.Given that you have a lot of stainless steel knives and that the SP1000 is really more like #700, it is probably wise to stick with #3000 or lower grinding...
