Roll Call for 2016 ECG (May 15)

Dag nabbit! I just wrapped up wedding planning, and hopped on the forums today to check in on gatherings after a hiatus. This was basically in my back yard. Go figure! Guess I'll be on the lookout for 2017.

    Boundary Stone DC

Congrats! I love that place for drinks. Don't think I've eaten much there before, but I'm moving from MD to Shaw this weekend. I'll have to drop by for some grub and say hello!

    another DC event, ramen edition.

Toki was great when it first opened since I had friends that lived on the same block and it wasn't too crowded. Past few times I've had to go elsewhere since the wait was too long. My memories of it are still incredibly fond, though. It left a stronger impression on me than Momofuku in NYC did.

Sous Vide Who has used the Ziplock bag technique successfully for both solids and with liquids?

Are you folks using zippies sealing them by submerging under water to push all the air out? That's the main trick that helps me use them effectively for everything I've needed. See halfway down Dave Arnold's "Sous-vide without a vacuum" primer...

Also, since you'll be in the neighborhood, you should come to the local Sweet Potato Festival on Oct. 4th. Last year there were 21 different varieties to dig up, and even sweet potato ice cream. It is a recurring highlight of my year. Last time I brought home 50 lbs of that most honorable of...

    D. Martell Moving Shop

I drive up 83 from MD to go visit my family in Lancaster. Sounds like a visit to the new shop is in order when I head up in a few months ;) And oh yeah, it's about as Amish as it gets out there.

    Recomended Atoma Combo. 140+ ???

Costwise, in only saves ~$10, but it's nice to have a more compact kit.

    Recomended Atoma Combo. 140+ ???

You make one by applying a replacement pad to the back of a regular Atoma plate. Sounds like you need to polish the back of the plate a bit to get it flat first. Theory might have been the first to dream up the idea, as far as I know.

Sous Vide Sous Vide - New Sub Forum

They give you a spoon, syringe, and bags of white powders? Some modernist cooks need to consider a 12-step program... My drawer full of syringes is labeled "For culinary use only: no junkies allowed!"
