    Maybe someone can educate me, is the difference here that he is using a different finish for the kurouchi and using wrought iron instead of his usual “soft iron” I see it listed as by retailers?

    Amazing the difference in bloomery Iron knives from JNS. I have a bloomery Toyama and it is nowhere near as nice as this. The contrast in yours is spectacular compared to mine. Really beautiful knife and I hope you love the extra height, I think thats super cool.

    Hahaha, in some ways yes, in some ways no. Compared to my family, I am a god with a kitchen knife. Then I log in here and see a post by somebody who actually works in a kitchen and has cut up more potatoes this morning than I have in my entire life. So I try to stay humble and in my lane.

    I agree that most honyaki’s are not worth it if you’re actually using them. I certainly have never noticed a performance difference with a honyaki in culinary use, so if the hamon disappears with use there isn’t really a reason to have it. That I am aware of at least.
