For work on wood I use a pattern makers vice from StewMac or Woodcrafters. WoodRiver - Patternmaker's Carving Vise For metal work I use a heavy universal bench vice, Parrot brand I think, with leather jaw pads.

Carter Warncliff style neck knife in White 1 steel with kydex sheath; 3”blade, 7” OAL, and 70g. Great little workhorse. Wore it a couple of months and it’s gathered dust since then. It’s been sharpened and thinned, with blade and handle showing use. New these run about $$650-$700. Asking $349...

Carbon or stainless? As noted, I do not recall what steel this knife is and can't represent one way or the other. It is super easy to sharpen, really holds an edge, and it does indeed stain--even with light use it needed a Flitz polishing before photographing for this post.
