Trying to decide between a Itinomonn Kasumi 270 and a Kochi 270 Migaki Gyuto.
Both look like good knives from trusted vendors.
I tend to favor a flatter edge profile.

My favorite knife is a Tetsuhiro 240 Gyuto.
I push/pull cut and chop almost never roll/rock chop.
I prefer a wa handle but can live with a western style handle.
Either carbon or stainless are fine.
