Poll: Does blade surface roughness affect on food release? What surface finish releases best?

I have found that the food is more important than finish of the blade. I am slicing potatoes. Nothing is sticking. I finish the bag and get some more potatoes to slice. Same brand, bought same day in the same store. Every slice of potatoes from bag #2 stuck. Washing the knife did not...

    Cutting board effect on sharpness

The only unexpected result I saw was edge grain and some plastics treating the edge the same as end grain.

Cost to Get Started Japanese-style Knife Making

Rather than trying to do Japanese-style knife making, why not make knives that have their best qualities. High hardness, good edge stability, good geometry, light weight, comfortable handles. You are not going to find Hitachi blade steel in the states, so you will have to make do(cue the...

    Cutting board effect on sharpness

Yes poly boards scar easily and terribly. But, I can buy a piece of HDPP 48"x20" for about $25 delivered, enough for a bunch of various size boards. I end up buying a new sheet every 18 months or so.

    Comparative grit question

grit is defined by grain size. US or ANSI 100 grit is 125 microns. trouble is everyone uses different system. so ansi 100 = j100 = p120(p seems to be european). but ansi 320=j500=p400. so read fine print before buying a stone to make use.

    Making a handle (1st time)

as said, if coated in wax, probably not fully dry. i have found stores locally that have "Exotic" wood in thin section(1/4 to 1/2 in thickness), 1" or 2" wide that are dried and ready to use. might be a better option

    Best SLD steel knives

A2 semi-stainless??? is just another steel, rusts just as fast as plain jane cold rolled. but to question of the hour, SLD is a D2 under a different name. either go 1095/white or full on stainless like 440C or 13c26. SLD just sounds like current "Steel of the Month" rather than anything new...
