    What tier is konosuke?

What a fantastic read on the history - I had no idea it was this complex. It was listed as a konosuke fujiyama blue #1 with khii ebony handle (240mm) on tosho's website from which I ordered directly but from the info above, it's most likely an FM. It was purchased in December of 2018. As for...

    What tier is konosuke?

I rotate between two main gytos: a Marko Tsourkan and a Konosuke Fujiyama blue #1. Both are fantastic and create fear amongst the vegetables. I purchased them a few years ago but I don't really see konosuke fujis get mentioned much in comparison to some of the other top makers (yanick...

    Upgrade for my Konosuke Gyuto

Update. Knife still rocks and is growing on me. I just accidentally sliced through a mango, seed and all with very little effort. I'm really liking this workhorse grind, too. I have it paired with a kono 150mm petty (laser) and it's a perfect combo.

    Upgrade for my Konosuke Gyuto

Overall impressions are really positive. It's an adjustment getting used to (its about twice the weight of my other two lasers) but it definitely gives it a bit more 'oomph' for push cuts and a bit more confidence on the board. It 'falls' through food rather than slices. A bit more resistance...

    Upgrade for my Konosuke Gyuto

Correct me if I'm wrong but I'm fine with A2 - I'm doubt going to be able to tell much real life difference between A2 and 15200. A2 a bit more wear resistant, 15200 a slightly better sharpness, etc. Seems like both are great steels, semi-stainless A2 is probably easier for me anyways. Only...

    Upgrade for my Konosuke Gyuto

Annnnnnd Marko has been purchased. 245mm A2 gyuto in a symmetrical grind in mango wood. Described as a 'workhorse' so we'll see how I like it compared to my kono. I wanted to try his S grind but this popped up on cktg so I ordered it. Cheers & thanks for the help everyone!

    Upgrade for my Konosuke Gyuto

After some reading, further narrowed it down to two choices but can't decide. Gesshin gengetsu in semi stainless or a marko 52100.

    Upgrade for my Konosuke Gyuto

I've been cooking more at my girlfriends place and her knives are awful so I need a second gyuto because I will be leaving my kono hd2 240mm gyuto there. Aka. I have a itch to spend some money on a new knife. No preference for stainless vs carbon (I wipe my blades down every time I use them)...

Looking for a mid level gyuto from any gyutos similar in quality to: Devin Thomas, Marko Tsourkan, Kono Fuji, etc. Currently trying to upgrade my kono hd2 - love it, just figured I'd try something new. Price range looking at $400-600. Ideally something in good/great shape, I'd like to be the one...

    Konosuke Fujiyama Knives

Just received a knife I bought; I couldn't be happier. Pictures definitely didn't give it justice because the knife is beautiful in person. Friendly bump!
