I just accidentally sliced through a mango, seed and all with very little effort.
I'm really liking this workhorse grind, too. I have it paired with a kono 150mm petty (laser) and it's a perfect combo.
Overall impressions are really positive. It's an adjustment getting used to (its about twice the weight of my other two lasers) but it definitely gives it a bit more 'oomph' for push cuts and a bit more confidence on the board. It 'falls' through food rather than slices. A bit more resistance...
Correct me if I'm wrong but I'm fine with A2 - I'm doubt going to be able to tell much real life difference between A2 and 15200. A2 a bit more wear resistant, 15200 a slightly better sharpness, etc. Seems like both are great steels, semi-stainless A2 is probably easier for me anyways. Only...
