    Bird's Beak Knives

FWIW, I got a similar Herder bird's beak and didn't particularly like it. The Vic just felt better in hand.

    Bird's Beak Knives

After some more research, anyone have any experience with the Toijiro DP one? Looks like the heel might be a bit sharp.

    Bird's Beak Knives

I saw that one in your chicken butchery video. Very cool, but probably beyond my European post-doc budget, alas.

    Bird's Beak Knives

Thanks heavens no. 😂 But I actually use it instead of a regular paring knife. Just feels more intuitive for in-hand work, for some reason. Sharpening is indeed a problem, one alleviated slightly by the lack of board contact. My Vics I just use a honing rod on sometimes. But I was actually...

    Bird's Beak Knives

Inspired by panda's recent thread on paring knives, I was wondering what people's thoughts on bird's beak paring knives are. I've always used the little Victorinox one you can get for a few euros, but have obviously been wondering as to whether there might be a better alternative. Tried a Herder...

    Bought 180mm Yanagiba

Before I go scouring on Mercari, I thought I might as well as see if anyone has one here. Looking for a ~180mm right-handed yanagi (in any of the Hitachi steels). Let's keep it under $200—less is more.

    SOLD HADO Junpaku W#1 240

Yeah, Maruyama did a sterling job with these. And the shinogi is high enough that you don't feel it even through dense produce.

    SOLD HADO Junpaku W#1 240

Description: This is by far the most beautiful knife I've ever had the pleasure of handling—pretty impeccable fit and finish and a gorgeous handle. Got this recently from a fellow forum-member, removed the annoying lacquer they put on it, gave it a quick touch-up on a BBW, used it for a few...

Convex or S Grind Santoku makers

I got mine off of a fellow forum-member. Looks a lot like this one: https://www.epicedge.com/shopexd.asp?id=95728 Carbon has the nashiji version, with a slightly different grind. And Bernal has one in V2.

Convex or S Grind Santoku makers

Wakui's stainless-clad migaki line comes to mind, although your wife will still have to deal with a carbon core. Great convex-laser grind, though, with remarkably good food release.
