AEB-L 240mm Gyuto
Hello and good day. Like the title said. This is a 240mm Stainless Gyuto.
Here is the kicker. The handle on this is Mammoth Ivory. 12,000 to 20,000 thousand+ year old mammoth tusk. :) What doesnt show through in these images is that the color has a blue hue. its subtle. yet its there and quite awesome. Also Ivory has a beautiful grain/matrix like patern that is very hard to capture in a image. :)
About Mammoth Ivory.. This material is very durable and makes amazing knife handles. It is smooth as silk to the touch, Yet has a unique gription that is superb. The feeling of this material is like nothing else you will ever feel. Over time the natural oils from your hands as well as the foods you prepare will allow the ivory to patina and more of its natural character will start to show. This is the first and only FULL handle of mammoth ivory I have even made.

Blade is 240mm from tip to heel. AEB-L Hardened to RC 61
Thickness 2.75 tapering to 1mm a inch behind the tip. Measures 47.5mm tall at the heel
Grind, R hand ground. convexed
Handle, Mammoth ivory. Highly contoured and quite beautiful.
Pins Copper fasteners with single mosaic pin.

Great knife. I would be too much of a coward to sand the scales down that much, but it does look great with that little bit of bark left. Can I ask you how you finish that handle? If it's a trade secret, just let me know, I can take it ;)
