I've been to the school that produced this guy for an ACF culinary competion in Madison. Nice school, no idea why someone would select this guy to demo his knives. Lot's more talent there.
also, over the past few days my culinary school competed in the same regional competition as this one. Part of the skills competition is filleting a fish, saving the head and spine for compost, while pullling pin bones. Our girl perfectly blew throuh her two trout (whith ****** knives mind you) in four minutes. One judge came over to her and started singing "this girl is on fire!" by Alecia Keyes.
Is that like a giant halibut?
