All I know is I use the Tsubaki oil...on all my high end stuff (drawer queens)...and I have / had a lot of them. Never had a problem with rusting or patina forming.

you should wait 24 hours between coats if you really want a perfect finish...
Tru-Oil is fine...it will finish harder than Tung Oil and it also dries quicker than pure Tung Oil. True oil can get a mirror shine, Tung Oil...not so much. Tung will feel "smoother" like real...

VG-10 is a very good steel, it's not as good as SG-2 or SRS-15 but it get really sharp, just doesn't hold the edge that the other two do.
Can't go wrong with the Masamoto KS...or any other Masamoto for that matter

my wife uses the Shun Santoku...hell, I'll admit it...it's a damn fine knife. It's not a laser but it gets the job done and the edge retention is great.
I have had everything... Ikeda (Akifusa) are the best of the bunch
KK and KS....pretty much the same knife....if you are good with stones / sharpening go with the KK...if you want something almost good to go out of the box...KS...I have a KK yanagi and it's great....

Like I said before the KD is a beautiful knfe...very special but the performance is not on par with the looks....and...there is always Mr. Itou...who uses R2 steel....
