How did you refinish them?
hmmm...well that's bunk. Guess I'll just have to live with this crummy Shig :)
They show a 210mm in kurouchi for Y22.5k here. Actually if it is SS clad, Kasumi is fine too. I'm guessing the 210mm listed for Y25.5K here is the kasumi SS clad?
Been away from the forum awhile, but once I got my Shig seemed all my questions were answered :) Anyway I was wondering what the opinions are of the grind of the Watanabe Pro line (blue steel core,...
So now sees an issue using different angles on either side? Or working one side more than the other? Or should I just keep things equal?
The same thing as me or tk59?
I have had a 210mm Shig kasumi gyuto for a few months now and did the first sharpen the other day and was wondering what angles other Shig owners use? Looking at the grind with a straightedge mine...
Those are pretty curved. It was the main reason I sold mine.
I just started to freehand and found the angle cube very handy
I have Shapton GS 500/1k/6k. Usually just use the 1k to 6k. Sometimes I think the 1k is probably overkill to start with. I'm leaning toward getting the Gesshin 2k soaker just to see how it feels....
The Gesshin sound compelling. Do the splash and go models have as good a feedback as the others?
Been learning to sharpen on shapton glass stones, and I really like cutting, and splash and go, but was hoping for something with more feedback. Looking for a single 1k or 2k stone to try out. Brands...
I've used Sam Maloof poly/oil and really like it. A somewhat unique product that is good for beginners (like me). I'm not sure though if a poly is recommended for a knife.
japanwoodworker is refunding me for the knife, no hassle at all! Just snagged the last one from maxim to replace it!
I called them today after not receiving a reply to my emails. The CSR was very apologetic about the delay and is refunding me for the flawed Shig! No complaints here!
Well they haven't answered my email concerning my flawed Shig yet. I'll give it another day or so before I have an opinion.
I've contacted the vendor so we'll see. They don't have any in stock and it appears they don't expect any until fall.
Couple better pics
My new Shigefusa :( Looks like it is about 4mm long by maybe 0.3mm tall.
I noticed a little flaw while sharpening my knife the first time, and today sharpening it again it seems more noticeable. Looks almost like a hollow spot on the steel?
panda when you say stainless do you mean VG10 or ginsanko? The VG10 looks the same as the blue in the pics, ginsanko is obviously different.
How does the grind compare between the blue and VG10? My friend has a blue and loves it but he's not sure if he is up for the care required with carbon steel, so he was looking at the VG10. BTW...
I guess I was under the impression BKF would remove the patina?
How bad? I have a Shig and recently went down this road of dealing with reactivity (started a thread here) and ended up with something I *think* I can live with. But I do still get some orange-ish...
Interesting that the belly of the handle is so far forward. Exactly where it should be for a pinch grip, yet nobody seems to put it there.
