Cant speak in the $300+ range, but my Weber Summit 670 which is a bit more, with infrared is awesome. Even heat, sears like a beast. It is a great grill
I own and love my Itou. Haven't had any issues with the R2 steel, like it a bit to be honest. It holds an edge well. I think you will enjoy it for years to come.

I have several Kumagoro knives. 270 and 240 gyuto, a nakiri and the petite santoku. Love them all. Sharpen nice and easy, hold an edge nicely, form a nice patina too.

Sold on 270s as a home cook with a decent amount of room in the kitchen. Might even be selling my 240s soon because of it.

I have a shun block, it holds some larger knives, but many have spines that are too thick. That is why I got that custom one.
I think the 10" is fine for eggs, the inner measurement seems a little smaller than other pans I have.
Thank you all for the input. I ended up getting the 10 & 12 in de buyer from west elm and the 11 and 13 in all clad. Can't wait to break them in. Still might have to try that Vollrath.
Wife is good at cleaning and caring for stuff in general. She is slowly learning knives, but she too cooks and loves to cook. So I am sure both of us will get good use out of her gift to me, LOL.
