I just got a 270 mm and it is my unicorn knife. Absolute stunner....
I have an entire decoy knife block......has worked great thus far.

Ginsanko is MUCH less expensive.
I am going to purchase a suisin deba. They come in Ginsanko and inox. Big price difference. Could I get some feedback on these steel and/or these deba.
Despite lots-o-knives, I find that I use a 270mm gyuto and a pairing knife 99.9% of the time. When I cook outside my house these are the only knifes I take.

Cure salmon in salt water
Sous vide in clarified butter with herbs 139 for 11 to 15 minutes
Brown outside in searing pan
Theory, can you post this recipe please.
