I'd always worn jackets in the past , when I came to Cairns ( a very tropical place ) I switched to a black T shirt ,chef pants and blue pin stripe bib apron.

Edge retention is good , feels quite different to my other knives on the stones . It seems to respond very well to my sigma power 6000 as a finisher.

@ squilliam Mineral oil is sold as paraffin oil in the supermarket here in OZ . If you ask for mineral oil no one knows what your talking about.

Wow Huw , Can't be too many of those in OZ.
Mine has been soaking for around 2 years, no issues . I just change the water every week and store away form sunlight.
