There are many factors, including a sharpener's ability and heat treatment. As a generalization however, R2/SG2 is considered a better steel than stainless like VG10.
I think Maxim has had a much steadier supply of Shiges the last year or so than any vendor previously. I think the demand is still the same, it's just the supply is much better.

Of the three you mentioned, I would vote Kagekiyo by a mile.
It is. The right has a soft shinogi line. It is on the left side as well, but much softer/flatter so it isn't as noticeable. Kinda reminds me of a Konosuke Fujiyama.
