That three stone sharpening set is a great starter set indeed, and priced well. I think you can do without the low grit stone for right now. When starting out, it's best to use the 1k as you base.
How that is some quality wood. Any idea what materials were used in the handle?

Never heard of Mozoz before, but they do look comfortable. How is the lining around the toe area. They seem more on the softer/plusher side in the pictures, but I can't really tell.
