    Most surprising knife you've bought?

Heiji, and Toyama. Heat Treat! Heat Treat! Heat Treat! Steels are so dense-----> sharper than others, silky smooth, edge retention.

    Watanabe for lefties, 270?

If a knife is a laser like takamura r2 red hadle, it does not matter. when a knife is thick like the toyama 270, it really matters.

    Watanabe for lefties, 270?

I am also a lefty who owns toyama 270. Mine is between 70/30 to 80/20 righty biased throughout the blade and does steer. When I ordered my 270, I also ordered the lefty toyama deba and mentioned that I was the lefty via email. If I use my 270 with my right hand, food release is fantastic. I...

Why did I receive Masamoto KS without a saya?

Unfortunately, it is 270mm. Thank you for asking though.

Why did I receive Masamoto KS without a saya?

I think everyone received sayas as far as I remember.

Why did I receive Masamoto KS without a saya?

No, I bought this from a Japanese vendor. JCK sells them included sayas, even CKTG used to sell them included sayas.

Why did I receive Masamoto KS without a saya?

I bought Masamoto KS gyuto, but it didn't come with a saya. I thought I was supposed to get the saya. Does it usually come alone without saya? Can anyone confirm this? I even see scratch marks from saya fitting on the blade. Thank you in advance.

    Whats your most expensive hobby?

Motorcycle track days.. one day out there costs me $500 total... One set of tires last me 2-3days (Almost $500) with all those aftermarket parts...if I crash, it will cost me at least 2-3 honyaki blades..I try not to go often, but really hard to resist when weather is perfect.

    Shigefusa kitaeji vs honyaki

Both are in a close price range. What would you buy? I haven't try any honyaki, so I really wonder what I can get from a good honyaki from a reputable blacksmith? Shigefusa kitaeji is around $1000, and I think I can the good honyaki with this money. I only tried Shiggy kasumi so far, but I...

    Heiji Gyuto

Heiji carbon's edge keeps coming back by touching on fine grit stone forever. I don't know when I am going to hit 1000 grits stone. Edge retention is ridiculously forever as well. The sharpest carbon I have among all my knives.

    Burn mark on new knives?

I am not an expert. wakui is very thin like laser and has S grind. Really love S grind. Stainless clad really helps me maintenance to minimum. It gets really sharp easy (white #2). I personally feel that my wakui is less harder than my other gyutos. Hold little less acute angle, but still more...
