    Need help deciding on W#2 Tesshu vs Ikeda Migaki, possibly gyuto/santoku and petty.

    I recently got a Tesshu 240 in white 2 and I love it. At first I thought it wedged a bit, but it only really happens on sweet potatoes and I was comparing to my other knives which are mostly lasers. Love the weight of it, heavy enough to do work, but not too heavy.

    I have a beston 500 that removes metal pretty quickly. I've tried basic thinning a few times and think I'm starting to get the hang of it. Maybe just work it awhile on the beston? I'm afraid of using that stone because it removes so much.

    So I ordered a Tesshu and I have to say I'm a bit disappointed. It looks gorgeous and has great fit and finish and I sharpened to shaving sharp in a couple minutes, but it doesn't cut anywhere near as well as my lasers. It is really thin near the edge too, so I don't feel like I got a lemon...

    Yea. The scratch marks look terrible to me, if that is what you mean by refinishing.

    Yea. The Misono is a soft Swedish steel. I just can't seem to make it perform well. So should I just do a little thinning every time I sharpen? I hate the scratches it leaves on the blade. Makes them look terrible.

    Do I really need to buy a belt sander? I tried thinning a Misono on beston 500 and don't feel like I got anywhere despite spending a lot of time. Do I need to thin laser since they are already so thin? I ordered a Tesshu and am now nervous that I will need a belt grinder.

    I like the Gesshin Ginga. Awesome knife. The fit and finish on my Sakai Yusuke is better than the Ginga. I feel like the steel is better with the Yusuke too. GS+ is not worth the price but I actually like the new handles, but I don't think it cuts anywhere near as well as the yusuke or ginga...
