    Thick Knives

So I ordered a Tesshu and I have to say I'm a bit disappointed. It looks gorgeous and has great fit and finish and I sharpened to shaving sharp in a couple minutes, but it doesn't cut anywhere near as well as my lasers. It is really thin near the edge too, so I don't feel like I got a lemon...

    Knife thinning

Do I really need to buy a belt sander? I tried thinning a Misono on beston 500 and don't feel like I got anywhere despite spending a lot of time. Do I need to thin laser since they are already so thin? I ordered a Tesshu and am now nervous that I will need a belt grinder.

I just wanted to say that of the knives I've purchased to date, the Sakai Yusuke from blueway is by far the best value. Fit and finish is flawless and the white steel is really something special. I just got a Konosuke GS+ and I think the Yusuke blows it out of the water. Now that I've added...

    Konosuke Series 7

So I just pulled the trigger on a Konosuke Series 7. It is available at CKTG. Do you guys think this was a bad decision? I've wanted to try blue steel and at this price I actually can. We will see how it goes. I kind of like the rustic look.

    A noob's guide to knives

I got into kitchen knives a couple years ago. I don't have any exotic knives, and I'm a home cook. My best knives are a gesshin ginga 210mm wa petty, a 270mm Sakai yusuke standard gyuto and a 240mm misono dragon. A few observations: 1. Western handle is better imo. The trouble with the wa...

Hello all, I've been reading this forum for a few years and have gotten tons of awesome information. I'm really enjoying a couple of knives that this site steered me towards. I just received my 270 Sukai Yusuke Gyuto and I was so impressed I decided to post. And just as my first...
