    Any semi or full flex Japanese boning knives out there?

    There seems to be a lack of quality semi to full flex Japanese boning/filet knives. Obviously many makers default to the traditional hankotsu and honesuki with some minor variations thrown in. Anyone know of any decent to solid quality flex options? Price point is under $250.
