    I agree with daveb. If you're going to spend that much money, get copper. The advantage of copper over other materials is most noticeable in sauce making, where temperature control is crucial. And I'd go 2qt, myself.

    1251 - I was just suggesting a different direction to look in, i.e.; chisels, instead of razors. I'm sure the ones I linked to are crap, but you might be able to harden them with just a propane torch and a cup of water. Or oil.

    Macassar (or Makassar) Ebony is considered the highest grade of ebony, although I don't know why. It has brown streaks that people other than me apparently find attractive. I prefer the solid black, myself.
