WTB Mazaki stainless suji from JNS

I completely misread the title, sorry. It's the kaeru that's on sale. I just parsed "stainless suji" 🙈

    WTS HS58 Uchigumori [EU]

This was my first jnat, bought from Nutmeg. It's a bit of an allrounder, and since I've since acquired more specialized stones, I'm looking to part with this. It's 205x60x22 mm, HS58, and comes with a small uchi nagura. It's a little hard, but still a very straight-forward and forgiving stone...

Toyama sujihiki. Not that deep, so quite hard to capture - especially with a phone cam.

    Slate for sharpening

Slate is an entirely different beast than coticules/BBW, no garnets. They glue BBW/coticules on slate, but that's about the only link. Slate is metamorphic, fine-grained and homogeneous. There are numerous historical "brands" in Europe. They are pretty slow (although this varies, you want...

    Moritaka gyuto 240.

I've had a number of moritakas and never had any issues. I was surprised to see the hate once I started frequenting this and other forums. Good luck with finding one.

    Mazaki knives, maxims newest line

And a little update, it really seems to have a smaller, higher-degree angle at the edge. Apart from that, the blade road is a joy to flatten. Why this was added, I have no idea. Presumably, to give it a quick working edge - but that doesn't explain why it was so extremely dull ootb. So, for...

Looking for recommendations for an inexpensive White #1 or #2 knife to practice sharpening

Make a post on BST. Since it's a project knife, you don't really care about it having been sharpened before etc. I'm sure someone has something you could buy for cheap, depending on where you live.

    Mazaki knives, maxims newest line

Yup, didn't need that much work. I just needed assurance before I slapped it on a coarse stone :) As the pic below indicates, the edge is literally the lowest point, so there might still be some truth to the micro bevel-ish theory - and it certainly makes sense that I could get it sharp. This...

    Mazaki knives, maxims newest line

Hah. It's been so long since I used that trick that it must have completely slipped from my arsenal. Thanks.

    Mazaki knives, maxims newest line

I got a 240 yani. It's my first single bevel, so I'm not really qualified to give a proper review. One thing I can say, is that the thing is absolutely dull. Nowhere near usable. That doesn't really deter me, since trying my hand at sharpening/polishing single bevels was one of the primary...

    Jns price increase

As a Dane mostly getting paid in USD, I can also tell you that it has risen a little over 5% in the last month or so - from 6 to 6.35 kroner to a dollar. So, if you view it in USD, you are seeing what would appear to be price increases.

A thick slurry or more heavy on the water?

My favorite color is BLUE!.............A patina thread.

This is another example of what I'm talking about. The santoku has been used sparingly over a few months and chopped a few onions just before the picture. The petty just chopped a few onions before the picture. The difference, especially on the cladding is immense. They are both Moritaka knives...

    Reprofiling and Etching

So a 20% solution, or what is the concentration of the ferric chloride you use? I feel like this is something I should be sure of before trying it out. It looks amazing. I assume it won't work on iron clad knives?

My favorite color is BLUE!.............A patina thread.

Weird. It might be the finer polishing, then. I've had it happen to most other knives I've thinned/polished, this was just the most salient comparison. I had a Moritaka petty where I was almost convinced the cladding was semi-stainless, but which takes patina super quickly after the first major...

My favorite color is BLUE!.............A patina thread.

I have a question. Whenever I thin/polish wide-bevels, they always seem to become more reactive. Why is this, and is it possible to mitigate in some way? For instance, in the picture below are two Munetoshis, purchased at the same time, used approximately in equal parts. I thinned/polished the...

    Rounded wa handles?

I have a Moritaka petty which has a oval rosewood handle. I really like it, especially for smaller knives.
